Boo right into a roux…

Some days are just so cold and damp that all you can think about is curling up on the couch in an oversized sweatshirt and sip down warm bevvies and eat bowls of soup.

For me, those coldest days aren’t always in the dead of winter, but when we are in Spring, hoping and praying for sunshine and 70 degree days, and are instead greeted by Boston’s gray heavy overhead and rain.

So today after work, I hung over stove and created a homemade broccoli  cheese soup, which is creamy and cheesy but filled with tons of yummy broccoli, pureed for smoothness.

This recipe doesn’t have a whole lot of ingredients; you probably have most on hand–some onion, carrots, a few heads of fresh broccoli, some chicken or vegetable stock, salt pepper, and the ever lovely roux combo: butter, flour, milk or cream. Yum.

Oh, and if you’re like me, you take the plunge and dunk some homemade crusty bread in the entire lot. Perfection.
