Last night, I whipped up a simple depression era classic: whacky cake. It was popular during times when pockets were tight and access to cooking items like eggs, and milk, and flour were scarce. This cake has no dairy and features vinegar, which gives a distinct, red velvet-esque type taste.

Its so simple and moist and delicious without any kind of frosting.
