I am the muffin man...here I am and you know I can, love you, if you let me have a muffin now and then you won't forget me?

Today I had a hankering to bake, and deciding to save any bread baking for later in the day (for time scheduling dough rising sorts of mumbo), I hit the muffin train, and with at least one type, came out on er, (muffin)top!About the best thing that came of the blueberry muffins was the initial idea to make them (after thumbing through summer photos on my Macbook and discovering one all buttered up and calling out "eat me"), the realization that I always keep a bag of frozen fresh wild Maine blueberries in my freezer for odd hankerings, the fact I had milk in the house for once, and the batter, which was tastier than the end result. I refuse to post pictures of my rather bland tasting final result, but the batter is certainly drool worthy, don't you think?And after such a blah moment of realizing they were less than perfection, I decided to tackle the Flax Oat Bran Healthy Muffins over at Foodista, which are pictured above. And might I say, while there are a few more steps than most muffins--like grating fresh carrots and an entire apple--as well as several ingredients one might not have on hand (think Flax Seed Meal, Oat Bran), it is well worth the work.Plus, the carrots and the apple, while providing health benefits, also keep the muffins really moist without oil and other uless than perfectly waistline friendly ingredients.It's completely hearty and fully flavorful, too.If you like bran based muffins with a cinnamon kick--and carrot flavor to boot--these are for you. Let me know if you try them! They are the tops! And if anyone wants one, I've got 12 hanging about the kitchen right now demanding to be eaten.What's more, for the freaks out there like me, perhaps you need British psych-pop group The World Of Oz and their Muffin Man's help as background music as you whip up these babies in the kitchen. It's what I do for inspiration. Ignore odd fedora suits, seemingly powdered-like wig hair, and the clear fake playing of their instruments--its all part of the appeal, really.
