"The Muffin Man? Here I am, and you I know I can..."

"...love you if I can, have a muffin now and then you won't forget me!"Tonight I baked off a few of my Mum's famous Refrigerator Bran Muffins, which I have to say I consider to be the greatest muffins ever made, literally. This muffin mix can keep in the fridge for ages--in fact, the longer the mix sits, the better they taste.My Mum has been making me these tasty treats (packed with fiber, low fat buttermilk, and not much sugar but enough to make it a treat) since birth, most likely, or shortly thereafter. And the best thing? Refrigerator muffins means you can just bake off a couple--for a late afternoon snack with a cup of coffee or tea, or in the morning, for breakfast. Heck, anytime.There's nothing better then piping hot muffins. There really isn't.Do you have any Refrigerator Muffins that are just bliss? I'm always looking for other kinds.
